The fatty acid composition of vegetable oil is associated with the impact on human health and is the main factor for its stability and food application. The highest content of vegetable oils shows less than 40% saturated fatty acids in relation to the total content of fatty acids, except for palm and coconut oil. However, the health benefits of coconut and palm oil are becoming increasingly known, in contrast to the negative anti-saturated fat campaigns that have prevailed for decades.
